Everyone has their favorite side dish full of sin. Right? For some, it’s creamy mashed potatoes or macaroni and cheese. We have a special place in our hearts for this creamy cheesy cauliflower. It’s so so so good.
INGREDIENTS
1 large head cauliflower (adjust recipe amount according to your crowd size)
6 tbsp. butter, plus more for buttering the baking dish
1/2 cup heavy cream
6 tbsp. butter
3 cloves garlic, minced
2 cup grated white cheddar
1 cup freshly grated Parmesan
1 or 2 pinches of nutmeg
1 or 2 pinches of paprika
Black pepper and salt to taste
Preheat oven to 400º.
In a large pot of boiling water with kosher salt, cook cauliflower until tender, 8 minutes. Drain well.
Butter a large baking dish. Add half the cauliflower and pour over half the heavy cream. Dot top with half the butter, sprinkle with half the garlic, cheddar, and Parmesan. Sprinkle with a little nutmeg and paprika.
Repeat with remaining ingredients and season with salt and pepper. Top it off with a pinch of nutmeg and paprika.
Bake until cheese is melty and deeply golden, 30 minutes.
Let it cool 5 minutes, then serve.
Perfect side dish with any meal.
