Typically a Mississippi pot roast is made with just five ingredients, unless you’re me then I throw in everything but the kitchen sink.
This roast is so good. You’re gonna love it!
I’ve seen this recipe floating around in cyberspace for the past several years typically made with a chuck roast Though, I had a Boston Butt roast in the freezer, so that’s what I used. It was so delicious. It’s going on the rotation, as my brother-in-law likes to put it. I will admit I do think it would be better with the chuck roast.
Okay, so the typical five ingredients are:
1- 3 to 4 lb beef chuck roast
1 packet ranch dressing mix
1 packet au jus gravy mix
1/2 cup to 1 stick of butter (depending on your preference)
5 to 7 pepperoncini peppers plus /1/4 cup to 1/2 cup juice from the peppers
I use the typical 5 ingredients plus:
1 to 2 tablespoon olive oil plus a couple of squares of real no salt butter used for searing the roast. After searing add to the crockpot then add the five ingredients mentioned above:
A little more than 1/2 tablespoon granulated garlic
1/4 teaspoon or so of garlic pepper
Dash of Tony’s seasoning
About 1 tablespoon dried chopped onion
1/2 chopped white onion
1 teaspoon paprika
a shake or so of red pepper (more for a little extra spice or less if you can’t handle the heat)
a couple of swigs of Worcestershire sauce
1/4 cup beef or chicken brother (I prefer chicken broth)
Remember to add the slices of butter to the top of the roast with the peppers.
Add all of those ingredients cook on low for 6 to 8 hours depending on the level of tender you want to achieve. Or cook on high for about 4 to 5 hours.
Serve on sandwiches with slices of provolone cheese, horseradish sauce, mayo, or a little mustard (any condiment that you desire would work).
You can always serve this on a bed of mashed potatoes or go the traditional way and serve with roasted potato wedges and carrots.
One of our favorite side dishes with this roast is fried cabbage or cauliflower mashed potatoes.
