Pina Colada Banana Bread with Rum Glaze


For the pina colada bread-
1 1/2 cups flour
1/2 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup canola oil
2 eggs
1 tsp coconut extract (my newest obsession)
8 oz crushed pineapple, drained
2 ripe bananas, mashed
1/2 cup sour cream
1/2 cup + 2 tbsp shredded coconut
1/4 cup rum (I used Captain Morgan spiced rum.)
For the buttered rum glaze-
5 tbsp butter
1/3 cup rum
1/2 tsp vanilla
1 1/2 cups powdered sugar
