Mexican Cornbread
- 1 lb browned ground beef
- 2 Pckg Gladiola yellow cornbread (mixed as instructed)
- 1 can whole kernel corn (Mexistyle, Cream style or Jalapeno) this time I used Jalapeno
- 1 can green chili’s
- Cheddar Cheese
- Salt, pepper, cumin, and granulated garlic to season the ground beef.
Directions
Preheat oven to 375
Brown ground beef with seasonings
Mix cornbread following package directions
Add the ground beef, corn, green chili’s, and a handful of shredded cheddar cheese in mixture.
Spray baking pan with a non-stick spray. Place mixture in baking pan and bake for about 45 minutes on 375 until golden brown. Remove from oven and top it with more (a few handfuls) shredded cheese and return to oven cook until cheese melts about 10 to 15 minutes. Remove and cool.
Serve with red beans, cabbage soup or your desired dish.
