My favorite part about winter is soups, stews, and dumplings. This Hamburger Soup is so easy and delicious!
Ingredients
1 to 2 pounds lean ground beef (I use 90 or 93%)
1 yellow onion diced
4 medium potatoes peeled and diced
28 ounces diced tomatoes with juice
2 cans tomatoe sauce
1 tablespoon Italian seasoning
2 bay leaves
2 teaspoons garlic powder of granulated
salt and pepper to taste
1 12oz bag frozen vegetables
1 to 2 cans of water
Instructions
Brown onion and ground beef until no pink remains. Drain any fat.
Add diced tomatoes, tomato sauce, seasonings, frozen vegetables, and bay leaves. Simmer covered about 20 minutes.
Add the potatoes last so they don’t become mushy, and continue simmering until potatoes are tender 15-20 minutes.
I serve with cornbread and add a dash of tobacco sauce (that’s optional) but trust me you won’t be sorry that added it.
