I love everything about this time of year especially soups, stews, and chili’s. I could eat this stuff all year long, but my husband will not so I really enjoy them for the winter.

Warm Your Bones Beef Stew

Stew Meat (desired amount)
Salt & Pepper
Flour
1/2 cup vegetable or canola oil
1 medium yellow onion (diced) (I used small boiler onions sliced)
Water for boiling meat
1 pckg. McCormick Beef Stew Seasoning (optional but this is the secret)
1 small pckg. baby carrots
1 pckg. frozen mixed vegetables
4 to 5 medium potatoes (cut/cubed medium size) OR (I used a small pckg. Yukon Golden potatoes this time)
1 pckg. frozen whole or cut okra

Season stew meat and lightly flour. Heat oil in frying pan on medium high heat. Lightly brown meat for just a few moments. (you are just frying off the fat) Place meat on paper towel to drain oil.

In a large soup pan fill 1/4 way with water or fill until water just covers meat. Boil stew meat for about 2 hours or until tender and done. You may need to add a little water while cooking the meat (don’t over fill you will need room for the vegetables).

When meat is done add onion, McCormick Beef Stew mix (mix the McCormick mix with a little cold water stir well) add carrots continue boiling for about one hour then add potatoes boil for another hour then add okra and frozen vegetables continue cooking (about thirty minutes) until frozen vegetables are done. I add the carrots first because they take the longest and I add the potatoes later because I don’t want mushy potatoes.
Serve with Sweet Yellow Cornbread
