Ingredients:
1 to 2 lbs ground beef
1 to 2 cups water
2 packets taco seasoning (any brand will do and if you like the heat go with the hot)
1 packet Ranch Dressing mix
1 can black beans (any brand will work but I prefer Bush’s brand)
1 can Kidney beans
1 can Pinto beans or Red beans
1 can Original Rotel (if you prefer heat go with the hot)
1 package frozen sweet corn kernels (boiled for about five minutes in water and drained)
Salt, pepper, granulated garlic to taste
1/4 tsp Cumin Powder
1 white onion diced only use 1/2 in the soup mixture
Shredded Sharp Cheese and Sour Cream for topping
Corn chips or fried corn tortilla strips
Directions
Brown ground beef in skillet add onion and seasonings to the meat. Drain meat and transfer meat to large soup pan
Add water, beans, ranch and taco seasonings, corn, Rotel, and Cumin powder to meat mixture.
Simmer for about 45 minutes
Spoon soup in bowls and top with remaining onion, cheese, sour cream and chips. I like to add the cheese on top of my soup while it is still hot so the cheese melts.
