This recipes is from my sister-n-law it’s one of our family favorites. I might be a little prejudice but I have to say these are by far hands down the best enchiladas and so easy to make. Enjoy!

Stacked Enchiladas with homemade Enchilada Sauce ~

2 lbs. Hamburger Meat
¼ cup of Canola Oil
1 large count pckg. Corn tortillas
1 large pckg. Shredded Cheddar Cheese (I prefer Sharp Cheddar)
1 large white onion diced well
Enchilada Sauce (recipe below) Make Enchilada Sauce and set aside

Heat oil on low and dip tortillas in oil just to soften them up
Then add tortillas to Enchilada Sauce and let stand in sauce

Brown hamburger meat (season to taste) set aside

In Baking dish add a little Enchilada Sauce to bottom first
Layer as follows in baking dish:
Tortillas
Hamburger meat
Onion
Cheese
Repeat until stacked full in baking dish top with cheese and add remaining Enchilada Sauce over stacked Enchiladas.
Bake in oven 350 for about 45 to 50 minutes.

Enchilada Sauce
2 to 3 tbsp. flour
1 Chicken Bouillon
Garlic to taste
Salt & Pepper to taste
2 to 3 tablespoons Chili Powder (I prefer New Mexico Ground Chili Powder but any brand will work)
In large skillet heat oil on medium to high heat add flour and stir until it has a paste like texture. Add water, seasonings and chili powder. There are many variants on the web to make homemade Enchilada Red Sauce.
