This cheesy, creamy Squash Casserole with a rich buttery golden topping is a great way to win over any squash skeptic.
- 2 lbs. squash cut up boiled with salt until tender
- 1 medium white or yellow onion sauteed in 1/2 stick of butter
- 1 cabana pepper or any kind sauteed (optional)
- 1 cup mayo
- 2 eggs beaten
- 2 cups shredded cheese (I like extra sharp cheddar, but it’s whatever you prefer)
