A delicious and easy Strawberry Spinach Salad made with candied pecans and feta. Refreshing strawberry salad with so much flavor is great for a summer lunch or dinner.
8 oz baby spinach or desired amount
5-6 medium strawberries sliced
1 small red onion
optional: 2-3 slices of crunchy crisp bacon
1/2 cup/50 g crumbled Feta cheese
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
For the pecans:
Add pecans, brown sugar, and butter to a small non-stick skillet and cook over medium heat, stirring constantly until sugar starts to melt and caramelize, about 2 – 3 minutes. Transfer to a plate in a single layer to cool.
For the salad:
In a salad bowl toss together spinach, strawberries, half of the feta, red onion, and pecans. Top with more Feta and serve with Briannas’ strawberry salad dressing.
