Easy Taco Soup Food and Everything Else Too

This one is a must-try recipe, you’ll want to add it to the dinner rotation. This Taco Soup is super easy and loaded with ground beef, beans, and taco seasoning.



INGREDIENTS

1 to 2 lbs ground beef or ground chicken
salt and pepper to taste
1 teaspoon garlic (I prefer granulated)
1 can fire roasted tomatoes
1 can Ro-Tel
1 package Taco Seasoning
1 package dry ranch mix
1 15 ounce can pinto beans, drained and rinsed
1 15 ounce can black beans, drained and rinsed
2 to 4 cups (beef broth, water, or chicken broth) depending on how soupy you prefer
1 small package frozen corn, no need to thaw

DIRECTIONS

Heat a large Dutch oven over MEDIUM heat. Add the beef and cook until done. Drain off as much grease as possible from the pot and return it to the heat.

Stir in the garlic, salt, and pepper.

Stir in the tomatoes, Ro-Tel, taco seasoning, ranch mix, pinto beans, black beans, and all of the broth. Bring to a boil over MEDIUM-HIGH heat. Reduce the heat to LOW and simmer, covered, for 15 minutes. Stir in the frozen corn and simmer for a minute or two.

Serve with diced avocado, shredded cheese, Fritos, corn chips, and sour cream.
