Our family must have for Thanksgiving ~ this is the most requested side item for Thanksgiving in our family aside from the expected sides mashed potatoes, candied yams, green bean casserole, etc. I love Thanksgiving and can’t wait to share my family favorites with you.

2 pckgs. frozen sweet corn (thawed) or 2 cans whole kernel corn

1 can cream style corn

2 tsp butter

2 jalapenos diced (do not touch the seeds while dicing I wear gloves or scrape the seeds away with a knife)

1 red bell pepper diced

1 block cream cheese (softened at room temperature or place in microwave for a few seconds to soften)

Preheat oven to 350

cook frozen corn in a cup of water either boil on stove top or in microwave (I use the microwave). If you are using can corn do not cook just place in baking dish straight from the can.

In baking dish add corn, cream style corn and other ingredients.

Bake at 350 covered for about 30 minutes remove from oven and stir (mix cream cheese well) and return to oven for about 45 minutes.
