  • 2 ancho chiles, stemmed and seeded
  • Boiling water

  • 1 garlic clove
  • 5 scallions—4 chopped, 1 thinly sliced
  • Kosher salt and freshly ground pepper
  • One 3 1/4-pound boneless whole turkey breast with skin
  • 1 tablespoon all-purpose flour
  • 2 cups turkey stock, chicken stock or low-sodium broth
